Before we discovered the magic of primary fermentation enclosed under the crown cap we spent a lot of time on the secondary fermentation. As soon as we started experimenting with the secondary fermentation and especially with the method of rosé de saignée ala bloody rosé, we ourselves fermented with the fermenting must from the new harvests, in good vintages we were using this method also for the white sparkling wines.
ZERO DOSAGE
Pétillant naturel is a seriously looking energy drink. Harvest is still not over, a lot of grapes in the cellar are waiting for the press and we can almost drink bubbles from the vintage, energizing, pulsating and so fresh!
